About me

Hello, my Name is Jean-Marc Mandonnet but everyone call me Marco. I m professionally trained chef with 4 years experience from Sole Chef to Head Chef in yachting industry and 20 years experience on land (Villas, Restaurants and Resort). My last position was Head Chef on M/Y Redemption 70M (ex Félix). I have 2 French Chef Degree and 1 Pastry French Chef Degree from culinary school in France. I have B1B2 Visa (expiration date 20 September 2033), Ship's cook certificate, STCW, ENG1 (valid until 21/12/25), food hygene level 2 and International driving licence. I speak fluent English, Spanish and French. I m base in Cannes SOF and aviable to start to work at anytime. I have very nice personality, I m very hard worker, I m calm, no drama, everyone I work with loves me. I m really reliable person, I take my work very seriously for me is very important to do a great job and to have a profesional attitude at anytime. I m fully vaccinated, I m not smoking not drinking and I don t have any tattoos. I m very excited to join a new adventure and a new crew. All together we will provide an extraordinary experience for our guests. I love to make the guests happy with my cooking. I love taking care of people and cooking them good food. I m very nice too prepare raw fish (Tartare, Ceviche, Carpaccio, Sushi, Gravelax, etc...) and Cooked fish (Baked, Fried, Seared, Poached, Cocotte etc...). And offcourse I love to cook meat too. I love to prepare dessert and make pastry (cake, pie, french crêpes, madeleines, chocolate fondant, apple crumble, floating islands, panna cotta, cookies, crème brûlée etc...). I also like to offer themed menus (Japanese, French, Mexican, Thai...) and organize BBQ, buffets or brunches. I will adapt to everything the crew and guest want to eat.

Hobbies & Interests

In my free time I like to travel (I traveled around the world with backpack during almost 3 years), lurn a
new langage (I speak little japanese), discover new culture and try new food. I also like investing in the
stock market and make investments at my level. I also like to walk and watch sports.
